You get to eat with your hands which is already a unique experience in and of itself! Your other senses are set on fire with the lack of light! It is so much fun to take a guess at what you're eating and drinking as every course gets paired with its own individual cocktail!
Our experience was heightened not only by the creativity of the menu, but Tyler our guide was beyond measure in his expertise of the food and attention to detail and craft in mixology by taking twists on classics and his care of creation in pairings to entice our palates and keep them guessing and seeking.

The brussel sprouts were insanely smoky/bacon flavored. The apples that accompanied them were necessary to tone down the smokiness. Now, let's be honest, that spot has been a few other restaurants before but I hope this one is the one that sticks around.The owners are here to really bring their love of bringing the best ingredients to their menu. We came here for a friend's birthday. It was a Tuesday evening and we had a reservation. My husband and I arrived a little later than the reservation time and were immediately able to spot and sit down with our friends. The server had just taken the drink order but came back a few minutes later to take ours. I ordered an old fashioned (one of my standing faves). I will say they make a really good old fashioned ( I may have had a couple). I had also brought a cake and the server was really kind to offer to put it in the fridge in the kitchen to keep cool during our meal and when it was time, they brought it out for us to sing Happy Birthday and helped cut it and serve it to everyone at the table.As for the food, we ordered a few appetizers to start with for the table:Calamari - was a tad salty for me but the sauce and pickled veggies helped cut that for meRoasted Shishitos - made with pepper jelly and bacon ( yass!!!). I love me some peppers and the sweetness of the jelly helped enhance the roasted and spicy flavor of the shishito. I ate a few spicy ones, but I love spicy so it didn't bother me, but be careful if you can't handle the heat.Paku fish ribs - they were in a buffalo style sauce. I've never had fish ribs before but wow! This was my fave appetizer that we had that night. Fish was amazing and you eat it like you would a regular pork or beef rib.I may have tried some of our friends' dishes but for entrees we had:Beer can chicken - My husband and I shared this and it was very filling. It came with dirty rice, shishito peppers and hot sauce. Super cool, the chef came out with a glass of beer. He said they bring the leftover for the guest to enjoy with their meal. It's a whole chicken by the way. So glad we shared this! Even split in half there was a lot of food. King Crab Grilled Cheese - Alaskan king crab, appenzeller cheese on brioche. I just took a bite of my friend's sandwich and it was delish! The cheese was so gooey and there was the right amount of crab in the bite and the bread had the right toasted texture you'd expect in a good grilled cheese sandwich.I've heard good things about their other cocktail options and brunch options so coming back is a must! Dry wings with some goopy sauce on the bottom. Word to the wise: lots of hotel restaurants are catering to changing American tastes, especially the female business traveler and offering lighter, healthier and more interesting options. Stop trying to gank our expense accounts, and we'll be back for a solid product. Not to mention that it might be nice if the bartender mentions that happy hour is starting in 10 minutes when you sit down at 8:50 on a slow Wednesday night. Seriously, nothing peeves me more than restaurants playing "hide the ball" with special menus and the like. "Hey, did I hear you mention HH?" "oh, um, yeah...." Now that I know how delicious this is I can't imagine ever having oatmeal without PB! Mercy is located in the Le Meridien Chambers hotel. Now, let's be honest, that spot has been a few other restaurants before but I hope this one is the one that sticks around.The owners are here to really bring their love of bringing the best ingredients to their menu. We came here for a friend's birthday. It was a Tuesday evening and we had a reservation. My husband and I arrived a little later than the reservation time and were immediately able to spot and sit down with our friends. The server had just taken the drink order but came back a few minutes later to take ours. I ordered an old fashioned (one of my standing faves). I will say they make a really good old fashioned ( I may have had a couple). I had also brought a cake and the server was really kind to offer to put it in the fridge in the kitchen to keep cool during our meal and when it was time, they brought it out for us to sing Happy Birthday and helped cut it and serve it to everyone at the table.As for the food, we ordered a few appetizers to start with for the table:Calamari - was a tad salty for me but the sauce and pickled veggies helped cut that for meRoasted Shishitos - made with pepper jelly and bacon ( yass!!!). I love me some peppers and the sweetness of the jelly helped enhance the roasted and spicy flavor of the shishito. I ate a few spicy ones, but I love spicy so it didn't bother me, but be careful if you can't handle the heat.Paku fish ribs - they were in a buffalo style sauce. I've never had fish ribs before but wow! This was my fave appetizer that we had that night. Fish was amazing and you eat it like you would a regular pork or beef rib.I may have tried some of our friends' dishes but for entrees we had:Beer can chicken - My husband and I shared this and it was very filling. It came with dirty rice, shishito peppers and hot sauce. Super cool, the chef came out with a glass of beer. He said they bring the leftover for the guest to enjoy with their meal. It's a whole chicken by the way. So glad we shared this! Even split in half there was a lot of food. King Crab Grilled Cheese - Alaskan king crab, appenzeller cheese on brioche. I just took a bite of my friend's sandwich and it was delish! The cheese was so gooey and there was the right amount of crab in the bite and the bread had the right toasted texture you'd expect in a good grilled cheese sandwich.I've heard good things about their other cocktail options and brunch options so coming back is a must! Hell, even the Bulldog is better. Hot Salami Roll aka "Overfried Hot Pocket. Thrice fried fries come out over fried, like the ones from the bottom of the fryer. Dry wings with some goopy sauce on the bottom. Word to the wise: lots of hotel restaurants are catering to changing American tastes, especially the female business traveler and offering lighter, healthier and more interesting options. Stop trying to gank our expense accounts, and we'll be back for a solid product. Not to mention that it might be nice if the bartender mentions that happy hour is starting in 10 minutes when you sit down at 8:50 on a slow Wednesday night. Seriously, nothing peeves me more than restaurants playing "hide the ball" with special menus and the like. "Hey, did I hear you mention HH?" "oh, um, yeah...." Sure, I was drinking a $12 shitty wine (10 minutes before HH started), and I'll gladly switch to a $5 shitty wine. I was not surprised when the order was not correct and when requests for things like Ketchup and a spoon either didn't get filled or took a really long time. Also not sure why a brunch spot would not have spoons in the silver ware roll...The food: This meal had some break out stars. 1. the coffee was really good! I needed minimal cream and sugar. It wasn't watery but it also wasn't a super dark and biter roast either. It hit the coffee sweet spot. 2. The oatmeal, I don't know why with my love of oatmeal and my love of peanut butter why I had never mixed them together before. Now that I know how delicious this is I can't imagine ever having oatmeal without PB! The caramelized banana was great but not the star it was meant to be for me. 3. the hash browns were herb-y and just the right amount of crispy, would have been great if we could have gotten ketchup but we still complete annihilated them. Our server was pretty good. The food... outstanding. We started with the cevice and lobster fried rice - holy moly. We then ordered garlic bread. Let's just say we continued to order garlic bread until I'm sure they ran out... it was absolutely DIVINE.
